Leek and Potato Soup
OK, so it's not the fastest soup recipe to make on our site, but it certainly is one of the tastest. With so many variations out there, Leek and Potato Soup is by far one of the most popular soups in the UK. We chop things up a bit with garlic sauteed potatoes, buttered leeks and fresh double cream!
Ingredients
- Leek - 1
- New Potatos - 6 (small)
- Vegetable Stock - 4 Cups
- Butter - 25g
- Double Cream - 30 Milliliters
- Onion - Half a Cup
- Garlic - 1 Clove
- Rosemary - 1 Sprig
- Salt - Good Pinch
Instructions
Soup Maker
- Chop the potatoes into thin slices (about the thickness of 2 pound coins stuck together)
- Finely chop the onion
- Crush the garlic
- Chop the leek
- Add a glug of olive oil to a frying pan, then when hot add the onion and garlic
- Once the onions are translucent, pop in the potatoes & rosemary and fry until slightly brown
- In the same frying pan, move the potatoes to one side and add a knob of butter then add the chopped leeks
- Stir for about 3 minutes until the leeks are soft
- Then add everything from the frying pan into the soup maker, add the double cream and set it to smooth for 20 minutes
- Serve with some finely chopped rosemary
