Pea & Mint Soup
This is so easy. I mean really easy peasy! (sorry) You don't have to add the double cream, but personally I think it makes all the difference. That combined with a generous pinch of salt.
Ingredients
- Frozen Peas - 4 Cups
- Vegetable Stock - 3 Cups
- Fresh Mint - 1 Cup
- Double Cream - 30 Milliliters
- Salt - Good Pinch

How to make pea and mint soup
Soup Maker
Bob the kettle on, when boiled add three cups of water with a vegetable stock cube into the soup maker and give it a stir.
Then, add the frozen peas, mint and double cream.
Set to smooth for 20 mins.
Serve with some fresh chopped mint and drizzle of cream.
On the Hob
Boil the 3 cups of water in a pan. When boiling, add the vegetable stock cube. Then add the peas and cook for a 3-4 minutes.
Empty the pan into a food processor and blend until smooth. Or use an electric handheld blender and mush up the peas in the pan.
Then add your double cream, stir on medium heat for a couple of minutes - and serve.
